Home Made Pasta Sauce

Whenever I go to Costco, I always get the huge punnets of cherry tomatoes for our salads. They are such a bargain that I cannot resist! However.. I never manager to finish them.

I cannot stand wasting food. My freezer is full of things I have managed to preserve (onions, peppers, chillies, ginger, garlic - you name it!) so I thought about the tomatoes.

One thing I make a lot of is pasta sauce - I normally use tinned chopped tomatoes though, so I thought, why not use my left over tomatoes!

The tomatoes I had left were starting to go soft - they were not off, but just a little too ripe!

In addition, you will need:

Vegetable stock - 2 cups
A clove of garlic
Half a chopped onion
A tea spoon of mixed herbs
Salt and pepper


Put everything in a large pan and turn up the heat! 


Once the skins on the tomatoes start to split, I gently popped them (VERY theraputic!).

I then threw everything in an electric chopper (a food processor works better, I just don't have one!) until everything was blended well.

I then picked my favourite jar and filled it! 


I didn't can the sauce - I just kept it in the fridge.

This will keep for 2 weeks.
